Should AI be allowed to override an operator's data?

Direct answer
No. AI should not override operator-governed data. It can flag a value that looks wrong, explain why and recommend a correction, which the operator then accepts or rejects through the normal override process. Letting AI override governed data would hand organizational authority to a model.
Why this happens
Overrides change what the organization accepts as true. That is a governance act, not an analytical one.
Routing AI suggestions through the override process keeps every change attributable to a person.

- AI reads governed values, not raw conflicting sources.
- Unresolved disagreements are visible to the AI and to people.
- Explicit grants for what AI may read, recommend and execute.
- Human determination for anything outside approved rules.
- A record linking each AI recommendation to its governed inputs.
